
Soups are great at keeping your body hydrated and nourished during any season! Especially when they are packed with healthy ingredients.
Ingredients:
-1lb ground beef
-1 medium sized red onion
-2 cups fresh spinach
-16oz beef broth
-2 garlic cloves
-one can diced tomatoes
-one can sweet corn
-one can black beans
-add generous shakes of the following spices:
-chili powder
-paprika
-cumin
-oregano
-salt
-pepper
Directions:
In a large stock pot, sauté ground beef and onion until meat is fully cooked. Add tomatoes, corn, beans and beef broth. Sprinkle in spices and stir well. Let mixture come to a boil for 10 minutes. Continue to stir to avoid burning. Add spinach leaves and reduce heat to a simmer. Add fresh avocado on top when serving for extra flavor!
