Paleo Buckeye Recipe


Who would have guessed that the first Christmas I spent with my husband's family (we were just dating at the time-young love!) his aunt would introduce me to the SECOND love of my life, the Buckeye! After eating my body weight in them, and feeling like I was about to explode sugar from out of my ears, I thought to myself "there must be a way I can eat these and still feel good!"...fast forward six years later, and PRESTO! Here is my dairy-free, gluten-free and sugar-free recipe.

INGREDIENTS:

-1 cup crunchy almond butter

-1/3 cup pure maple syrup

-1/3 cup almond flour

-1 tsp vanilla extract

-1 pinch of sea salt

-2 cups dark chocolate chips

Combine all ingredients except for the dark chocolate chips in a mixing bowl. Once mixed, separate into tiny balls and chill in fridge for 30 minutes. Once chilled, melt dark chocolate chips in saucepan. Dip the chilled almond balls into the melted chocolate and place on cookie tray. If leftover chocolate, drizzle over the top. Then place tray in freezer for several hours until the chocolate sets.
